View Full Version : Girl Scout choc mint homemade cookies

I love those girl scouts mint cookies, and I found this recipe in case you run out. I have made them and have ppl close their eyes to eat one and they always say girl scouts mint cookies.
Melt together:
12 ounces chocolate chip morsels
4 tablespoons shortening
Add 3/8 teaspoon peppermint oil or extract to the mixture.
Dip ritz crackers into mixture. Place on wax paper and let dry.
Now I keep them in freezer because they melt fast in your fingers, so maybe alittle paraffin in the recipe would help. If you make these , let me know what you think. Seems to me it takes about 1 to 2 sleeves of ritz crackers. been awhile since I made any......... :mrgreen:

Sounds good Sunshine! Does it matter if you use semi-sweet or milk chocolate morsels?

When I make them, I go with the semi-sweet :mrgreen:

sunshine I made those one time, but I didnt add the shortening, it came out pretty well without it....those are good though, they taste just like the real thing dont they? mmmmmm

For sure!! We really like em......when ever I want someone to try one, I make them close their eyes LOL and they always say, girl scout mint cookie???

I thought I would give this a bump, I haven't made these yet sunshine but as soon as I get to the store I am going to try them.

I love these things!! I feel like these are healthier to eat then the real thin mints, due to the fact it is ritz crackers, but not sure. Now you made me hungry for them again KC, Tks :nono

Do they have mint choco chips now? That would be an easy fix. Just melt the chips in the wave and dip?

hmmmm...I am not sure if they do or not, but that would be great. I am going to the store late this week, I will check and see if they have mint choc. chips. You know, white choc. chips and peppermint would be good too! yum

Yep, this recipe made over a quart freezer bag full so they are now in the freezer for when one of those cravings hit me! :)

I have made this as well, without the shortening. After they are dry, put them in the freezer - yumm!

This sounds great, but I'm wondering if you can tell it's a Ritz cracker in the center?

These are good. I just use Chocolate Bark melted to dip in the cracker.
